Well, these are just general traits to define their growing intimacy:
1. Sam manhandles Max often. Max finds it erotically charged even if it isn’t.
2. Sam is the more collected of the two, but, curiously enough, he starts noticing that the thought of committing sacrilege (defiling a priest – even one like Max) gives him a thrill he's never experienced with any streetwalker or a brothel girl. He feels conflicted about it, tries to rationalize it, but time and again he admits that it's simply fun to mess with Max this way and get a reaction out of him.
3. Max has a complicated relationship with being marked. He NEVER goes for deliberate retention of semen. If anything, I think Sam himself would opt not to come inside. Probably, as a long-time habit from dealing with prostitutes.
4. Encountering other lawdogs – especially bloodhounds – poses a constant inconvenience for the two. Given Max's status and their size difference, the first thing every bloodhound assumes when they smell sex on Sam and Max is that Max was... well, not a willing participant, so to speak. I think Sam would be aware (and afraid) of that reading, too, and put more effort into concealing the evidence.
5. Sometimes, before sex, Max could say something self-deprecating, like "Mon Dieu, qu'est-ce que je fais?"(My God, what am I doing?), but love and desire usually win anyway.
